Lamb and Broccoli Stir Fry | Asian Style
Servings - 2
Ingredients:
300g thinly sliced lamb
200g broccoli florets
Salt (to taste)
Pepper (to taste)
2 tablespoons peanut oil or vegetable oil
2 tablespoons finely chopped ginger and garlic
3 tablespoons soy sauce
3 tablespoons dark soy sauce
1 tablespoon sesame oil
1/4 cup chicken broth
1 tablespoon brown sugar
1-2 red chillies
1 tablespoon cornstarch slurry
Method:
In a bowl, combine the lamb with salt and pepper.
Let it rest for 30 minutes.
Heat 1 tablespoon of oil in a pan, add the ginger and garlic, and toast until golden brown.
Add the broccoli and sauté on high heat for 2 minutes.
Remove from the pan and set aside.
Mix the soy sauce, dark soy sauce, sesame oil, chicken broth, and brown sugar in a small bowl.
Heat the remaining 1 tablespoon of oil in the pan and lay the slices of lamb.
Cover and cook until the lamb is tender. Flip the lamb and cook all sides until they turn dark brown.
Add the broccoli back to the pan, mix, then add the red chillies and combine.
Pour the sauce mixture over the lamb and stir-fry for 2 minutes.
Add the cornstarch slurry and cook for an additional 2 to 3 minutes, ensuring the lamb, broccoli, and sauce are thoroughly mixed.
Serve immediately.
